Whipped Lemon Ricotta Crostinis

Serving up an effortless crowd pleaser that comes together in under 30 minutes! These crostinis look and taste fancy, but really only call for a handful of ingredients that happen to pair together so well. The whipped lemon ricotta alone can even elevate other side dishes like roasted veggies, similar to my Honey Roasted Carrots with Whipped Feta. Give these a try and I’m sure they will be your go-to appetizer, especially when you need something delicious in a pinch!

Ingredients:

  • 12-ounce baguette

  • 2 tbsp avocado or olive oil

  • 3 tbsp chives, minced for garnish

  • hot honey (optional)

Whipped Lemon Ricotta:

  • 1 cup Greek yogurt

  • 1 cup ricotta

  • juice of 1 lemon

Directions:

  1. Preheat the oven to 400°F.

  2. Use a bread knife to slice the baguette into about 16, 1.5-inch crostinis. Cover both sides of each of the crostinis in oil and spread them across a baking dish. Let these cook in the oven for 15 minutes, then broil on 500°F for 3 minutes, or until golden-brown. Once the crostinis are cooked, let them rest to cool for about 5 minutes.

  3. Make the whipped ricotta by blending all three ingredients together until smooth.

  4. Use either a snack bag cut at the corner or pipette tool to transfer the whipped ricotta to each crostini. Feel free to also use a spoon to put a dollop onto each one.

  5. Garnish with chives and hot honey, if desired, and enjoy! Best served fresh or within about two days, but I am sure that they will go quick!
